Foods That Contain Beta Carotene


Beta carotene is an antioxidant and carotenoid that, when converted by the liver, becomes retinol, a form of active vitamin A. Beta carotene prevents cell damage, protects the body from free radicals and enhances the immune system. The U.S. Food and Drug Administration has not established daily values for beta carotene. It is found in several orange and dark-green vegetables and fruits.


Sweet Potato


The sweet potato (yam) is a root vegetable harvested in autumn, but available year-round in stores. Eat the skin of sweet potatoes to obtain the most beta carotene.


Carrots


Carrots are another root vegetable loaded with beta carotene. Carrots are known to reduce the risk of heart attacks, improve vision and regulate blood sugar.








Spinach


This dark green, leafy vegetable is freshest from March through October. Its phytonutrients, including beta carotene, have anti-cancer properties. It may be eaten raw, steamed or boiled.


Cantaloupe


Cantaloupe is a sweet melon with pale orange flesh, in season in the summer. It is an excellent source of vitamin A with a highly concentrated beta-carotene content.


Winter Squash


Winter squashes include butternut squash, hubbard squash, acorn squash, pumpkin and turban squash. Harvest time is in the autumn, and all varieties of winter squash are high in beta carotene.


Broccoli


Broccoli is native to Italy and is in the cabbage family. It may be eaten raw or steamed, and is packed with healthful nutrients, including beta carotene.
